Rosie's Chocolate Banana Bread

1 cup oats 1 cup unbleached flour 3 mashed over ripe bananas 1 cup Greek yogurt (protein) 2 eggs 1 tbsp melted coconut oil 1 tbsp raw cacao 1/2 cup dark choc chips 1 tsp agave 1 tsp cinnamon 1 tsp baking powder 1tsp baking soda Pinch of salt

Combine dry ingredients in one bowl, wet in another. Loosely fold together until you have a smooth batter. Loosen, if required with milk of choice. Can easily make vegan by subbing egg for flax egg, Greek yoghurt for plant based! You can dub gluten free versions of oats and flour too. Add in protein powder for an extra bang for your buck.

The base of this batter can be used for many things! Add seeds/fruits/take out chocolate to taste.

Pour into a greased heavy loaf or muffin tin (can make a loaf or small breakfast muffins!), bake for 40 mins or until a skewer comes out clean. It’s a comforting fiber rich breakfast on the go, or a healthier dessert served with fruit and yogurt.
